Dark Chocolate Rice Pudding

Ingredients
2L full cream milk (or your choice of alternative milk)
240g Nice Rice Jasmine Rice
160g caster sugar
Zest of 1 orange zest
1 tsp vanilla extract
1 tbsp cocoa powder
170g dark chocolate chips
Pinch of sea salt
Method
1. Add the milk, rice, sugar, orange zest and vanilla extract in a medium heavy-based
saucepan. Bring to a boil, stirring occasionally. Reduce heat to medium-low and simmer, stirring
regularly for 30-40 minutes, or until the rice is tender and the mixture begins to thicken.
2. Remove from heat and stir in the cocoa powder, then add the chocolate chips and stir until
melted. Spoon the rice into your preferred serving bowls, then cover and refrigerate for at least
3 hours, or up to 1 day before serving.
